For some reason, I always had this idea in the back of my mind that cobbler was some sort of Southern culinary sorcery. I thought it was the sort of recipe you could only really get good at if you had great grandmom’s recipe and seven generations of fine Georgian ladies training you since birth. Then, one day, I found myself living in the Okanagan, gasping for air under piles of free peaches each summer. I had to do something with all that fruit, so I decided to look at a cobbler recipe just for fun.
To my complete surprise, I discovered that cobbler is one of the easiest recipes I’ve ever mastered. I didn’t need to summon the power of an Emeril “bam!”, there was no need to channel Paula Deen or call upon the gods of the mighty Mississippi (yes, I spelled that out loud all sing-songy, just like you just did). No stars had to align for me to bake the perfect peach cobbler the very first time I tried. It came out bubbling and sticky, crispy and sweet and I really haven’t stopped making cobblers every summer and fall since.

Now, we’re just past perfect peach time, so I thought I’d whip up some apple cobbler for you guys as our first recipe post. The best part, though, is that I reached out to a local flour producer and he wanted to give you guys some of his products for free. For your Okanagan Apple Cobbler, you will need:
10-12 Okanagan Apples, peeled and sliced 2 cups of sugar 2 teaspoons cinnamon Pinch of salt Juice of 1 lemon 1 cup of flour 1/2 cup of unsalted butter, melted
